Beaufort Oyster Soup Recipe Ingredients: |

| Oysters | either real Beaufort caught or canned (one can). |
| Milk | 1½ cups whole milk or 2% (thicken with a little flour). |
| Butter | ¼ cup butter (or oleo) to start with, then a little more after cooking some. |
| Evaporated Milk | ½ cup. |
| Worcestershire sauce | ½ tsp. |
| Paprika | season to taste, several pinches at first, then increase. |
| Salt and Pepper | season to taste buds. |
| Flour | use just enough to thicken up the regular milk. |
Melt butter (or oleo) and pour oysters & juice. Cook until edges begin to curl. Add milk thickened with a little flour, salt, pepper, evaporated milk, Worcestershire sauce, paprika and a little more butter. Stir well and cook until hot but do NOT boil. Add some oyster crackers on the side and there you go, Oyster stew, Beaufort style (just like Moms) **BEWARE....the aroma will cause new neighbors to show up on your doorstep wanting to meet you, along with lost relatives and all their kids and friends, and their friends too!!! |
